ok I am slightly embarrassed to post this.

I can NOT stand velveeta. It grosses me out. sorry people but it does.

BUT my husband loves to use it in those dips everyone seems to make with a can of chili for football games. Well we had one of those yellow boxes in our cupboard that was actually about to expire – I thought the stuff lasted forever but I was wrong.

I am trying hard not to waste food so thought hmmm…I will find some use for this.

I like her blog. It is my primary go to for slow cooker recipes. She has lots of fun different ideas…I mean of course a full year, 365 days of using a crock pot – who wouldn’t get creative!

My hubby and boys loved this soup. a lot. I wish it wasn’t a lot cause then I wouldn’t be sharing this recipe – and my friends are going to be surprised about this velveeta but I speak the truth and it was a hit. hence I share.

slow cooker cheeseburger soup

Ingredients

  • 1 1/2lb ground beef
  • 1 Small onion (diced)
  • 3 cloves garlic minced
  • 4 cups organic chicken broth
  • 2 potatoes (cut into cubes)
  • 1 cup milk
  • 1 box Velvetta (cubed)

Optional

  • Tabasco

Directions

In skillet brown ground beef, onion and garlic over med-high. Drain grease off. Set aside.
Pour in chicken broth into slow cooker. Add potatoes and stir in the browned ground beef mixture.
Cover and cook on low for 6 hours. 20-30 minutes before serving stir in milk and Velveeta. If you want a little kick add some Tabasco.

I adapted the recipe a little bit. I had 1 1/2 pounds ground beef and I wanted to use it all up. Plus her recipe called for 24 oz of Velveeta and I wanted to use up the whole box which is 32 oz. Also I didn’t peel the potatoes just scrub them good….and get from your local farmers market 😉
