I set out a whole chicken…put it in the slow cooker before I left for work and hadn’t decided what I was going to actually do with thee whole chicken for dinner. But off to work I went knowing I could do some searches and I’d find something that sounded good.
So of course what sounded good to do with my whole chicken???? TACOS! Shredded chicken tacos to be specific. My sister Mary said that is all we eat is Mexican. Um Yeah what is your point. It is one of our favorite foods – I think it is my favorite. She opted for the leftover pizza in our fridge – her loss. Now I have leftovers for lunch. Notice the sisterly jabs. LOL
When I cook a whole chicken in the slow cooker I just add a bunch of spices. This particular day I did cumin, salt and chili powder. I put it on low and cooked for 8 hours. It can cook for less this was just how it worked out with my work day. And you don’t have to add any liquid. The chicken will create its own juices.
Remove the chicken and set out on cookie sheet. Once it has cooled enough to handle pick apart and shred it up. Now with all the bones and non-meat extras you can do a homemade chicken broth. This is the recipe I have used before and really like.
So you know how I like to try to make as much as I can homemade right!? Well I now REFUSE to buy those awful full of salt packets of taco seasoning. Making your own is so easy and so much better for you! It is SO easy. Just buy an extra spice container to keep this seasoning in and you will have it ready for all those Mexican dishes I will be sharing with you
- 1 tablespoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon crushed red pepper flakes
- 1/4 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1 1/2 teaspoon ground cumin
- 1 teaspoon sea salt
- 1 teaspoon black pepper
|In a small bowl mix all ingredients together. Whisk so well blended. |
Store in an airtight container.

Note: Approximately 2 heaping Tablespoons is equivalent to 1 packet of seasoning. I would also recommend doubling this recipe. This way you have lots extra.
All I did for the rest of this meal was put my shredded chicken in a pan and heat up. Sprinkled with 2 Tablespoons of the taco seasoning.
Serve on flour or corn tortillas with cilantro, tomato, cheese, salsa and sour cream. And any extras that you like.
To make the meal complete I served with Amy’s Organic Refried Beans with green chilies and I made homemade spanish rice. And you can’t have a Mexican meal without lots of chips and salsa.
Overall this was a quick satisfying meal for dinner. I thought the dish could use a bit “more” – like I could have done more when cooking the chicken or after I added the taco seasoning. My search will continue for the best shredded chicken tacos.
But make the taco seasoning. That is a must. Esa es una necesidad – Adiós amigos.
