i really enjoy a roasted chicken.

a homemade roasted chicken…not the ones you buy at the grocery in those plastic containers…sorry peeps.

when i saw this recipe at Mel’s Kitchen Cafe i was intrigued.

hmmmm….rock salt….

my local grocery did not have any in stock so i went to my next source amazon

yep i bought a case of rock salt…the bonus: rock salt = ice cream salt…so i guess i am all set for summer and making home-made ice cream. but that is a whole separate conversation.

all i am trying to say is that yes i have a case of rock salt/ice cream salt when you only need one box for this recipe…as i said before homemade ice cream…woot woot

at first it seemed silly to be using a whole box to roast the chicken…maybe it is but i followed the recipe none the less…and really one box of rock salt was $1.51 so even though it seems like a lot it was not much money so just go with it people.

i – we – enjoyed this chicken…nice easy simple way to roast your own chicken…

i would do this recipe again for sure.

rock salt roasted chicken


  • 1 whole chicken
  • 4lb box of rock salt / ice cream salt
  • 1 lemon
  • 3 cloves garlic (peeled)
  • 1 tablespoon Italian blend seasoning


Preheat the oven to 400 degrees.
For easy clean up line a a 9X13 baking dish with foil. Next, pour the box of rock salt into the pan into even layer. Clean the chicken...removing the bag of inards that are usually included inside the chicken like neck, gizzards, etc.. Rub chicken with salt and the italian seasoning. Poke holes in the lemon with a fork and shove inside the chicken along with the garlic cloves. Secure the chicken closed with toothpicks. Place the chicken on the bed of salt breast side up.
Total bake time will be about 90 minutes. Initially bake for 40 minutes then carefully flip the chicken over so now that is breast side down and bake for another 40-50 minutes. I cook chicken till inside temperature is at 180 degrees.

Does the rock salt dry out the chicken? I love salt so I have no problems with it being on the salt side!

I have never roasted a whole chicken before but this looks so easy. Seems like a good weekend project/

Reba…no it doesn’t dry it out…it is a super easy way to roast a chicken…easy clean up too. and it doesn’t taste salty at all…i am sure there is some science techy answer as why it works…lol..

Hi Angela! I was wondering what was going on when I saw your opening photo. It almost looks like the chicken was sitting on ice. Now, I see that it’s salt. I have to say that I have never heard of roasting chicken on salt, but it looks easy and sounds like it was a winner!
I agree with you about store bought rotisserie chicken, I think it always tastes better at home as well as it makes the house smell great!

I love that you went to Amazon in search of rock salt. Bring on the ice cream! Hopefully the snow melts soon so that you can put it to use. Until it does, this chicken looks like a warm, homey cure for cold weather.

amazon is my resort when I can’t find it locally…gotta love that 2 day shipping! and snow melt soon please…the positive is it is pretty and snow days stuck at home!
