{meatless monday} herbed buttermilk salad dressing

I made this recipe this summer and forgot to post. I have a problem with forgetting. BUT still wanted to share since salad dressings are so good anytime of the year…and with my VitaMix I am loving trying all these fabulous recipes I find on Pinterest. Yes again I know my love with Pinterest. I could just keep saying it

I bought buttermilk to make these amazing looking delicious buttermilk pancakes….and have not gotten around to it yet…which I will… it is just I bought a lot of buttermilk so knew I could use in another recipe.

I choose this recipe since at the time I had parsley to use up….that we were growing in our herb garden. The nice thing with parsley is it is easy to find in your grocery store any time of the year.

This salad I made (during the summer – sorry I am totally not being nice) with mixture of romaine & iceberg lettuce, heirloom tomatoes and lemon cucumbers…all from the local farmers market. YUM

Herbed Buttermilk Salad Dressing

Ingredients

  • 1 cup buttermilk
  • 1/2 cup mayonnaise (I used vegenaise)
  • 1 tablespoon freshly squeezed lemon juice
  • 1 clove garlic (minced)
  • 1 tablespoon fresh parsley (chopped)
  • salt & pepper to taste

Optional

  • 2 tablespoons chopped fresh chives (I did not add to mine since I do not like chives.)

Directions

Add all ingredients to your blender or VitaMix and puree.

Pour on salad and enjoy.
You can store in air tight container in refrigerator for up to a week.
