Meatless Monday – Chilled Russian Dressing

Salad time – new dressing time!

I’ve said it before and I will say it again…I’ve been loving salads on Monday. After a weekend of endulgence…it is always so refreshing.

I bought salad greens, cucumbers and a green tomato at the farmers market. Hard boiled some eggs and tossed in some sunflower seeds. Went to the local bakery and bought a fresh loaf of what they called cuban bread – sorta like french bread. Whipped up this dressing and VOILA. YUM. DINNER. SATISFACTION.

Chilled Russian Dressing


  • 1 cup mayo (I used vegenaise)
  • 1 teaspoon horseradish
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried parsley
  • 3 tablespoons chili sauce
  • 1 tablespoon ketchup


In a small bowl, whisk together all the ingredients. Chill before serving.
