The photo i took was with my phone that i shared on instagram and when i uploaded here to the blog it was so ugly. capital U.

i was worried my photo was going to turn people away since it was so blah, brown and boring. so i asked Jackie if I could use her photo…she kindly said yes. thank you jackie.

i mean look at her photo…you can see the mozzarella cheese just oozing out of these….now friends her photo truly shows how they taste. does that make sense?

these quinoa cakes were such a great addition to the salad that we had.

and I have to note my boys ate these up!

plus they – in my opinion are healthy…sure there is cheese but not much…..just these lil’ nuggets of goodness.

Hey Angela! So I’m totally late in catching up on my blog reader this week, but I’m loving the looks of these quinoa cakes. I pretty much love anything that’s a “cake” – both sweet and savory… they’re just so darn cute and fun to eat. :)

I have book marked this recipe as well. They look so tasty and a perfect repice to freeze for multiple meals. I plan on adding in shreaded zuchinni.

Holy goodness. I think I’ve found next Monday’s meatless option! I love the gooey cheese coming from these – If I had mozzarella at home, I’d be making these tonight!

awww girl! You’re too sweet! Thanks for the shout out and I’m glad you loved these. The oozing cheese and the crispy quinoa is what makes these cakes the bomb! I like your new word, Monday’ers. It works for me. I have a couple of words that I use all of the time on the blog that I don’t think are real, like two-nighter. I use that word a lot when I have a recipe that provides a meal for two nights. Happy Monday girl! xoxo, Jackie
