I’m still here…

in healthy, Main Dishes, tidbits

my goodness where have I been?

oh just at home. doing the same old. work. family. summer. life. outside. running. enjoying long nights.

up north. cabin. lake. swimming. fishing. family. friends.

and to admit trying to avoid my computer.

as when i am home with the boys i want to spend the day with them.

I don’t want my boys seeing me at the computer all of the time.

and with summer’s beautiful long nights…well we all are staying up late. so my typical blogging at night just isn’t happening.

playing. watering the plants. my so-called garden which consists of 2 tomato plants and 2 pepper plants (which are still alive so far garden success) cleaning. folding laundry. trying to put laundry away.

does my list need to go on?? LOL

oh and training for the madison-mini half-marathon I am running august 17th. up to 10 miles. woot woot.

and I have been cooking! just not taking pictures.

zucchini is in the air or land i should say. right now at our local farmers markets you can really load up on this wonderful vegetable.

so i wanted to share a few recipes that i have made with this beautiful green veggie.

zucchini lasagna

recipe & photo from pioneer woman…however the inspiration came from mel’s kitchen cafe. i follow mel’s blog and when I saw her recipe new i wanted to use one of my many zucs in a lasagna.

baked turkey quinoa zucchini meatballs

photo & recipe from cookin’ canuck . isn’t this such a neat healthy way to enjoy meatballs.

hubby even liked this one. kiddo’s did too. and really what a different way to use up some zucchini.

creamy zucchini with linguine

Creamy Linguine with Zucchini

i pulled from two different recipes here.

photo & recipe from recipe.com – didn’t want to use the cheddar cheese that was in this recipe. second recipe from allrecipes.com

so see i have been cooking. just been horrible at sharing it with you all.

and in case you want a couple more ideas on how to use up your zucchini

here are my zucchini bread and zucchini banana bread recipes you should try out.

enjoy summer friends…i am going to work on following these rules :-)

I love all the summery recipes! I’ve been cooking with massive amounts of zucchini (and corn!) lately too. :)

Hey girl! I totally get taking a blogging vacation and I’m glad that you’re taking a break from the blog to enjoy quality time with your boys and family. For some reason, I’ve been able to blog a lot more this summer because I’m not shuffling my kids to and from activity to activity. I’m so busy during the school year that 2 posts a week is about all I can handle. My kids are older so Zoe is busy babysitting and Eli is usually running around the hood with his buddies. My hubby is also home as he is in-between jobs so he helping out tons.
That lasagna looks great! I really have to make a lasagna, that is one recipe that I haven’t posted on my blog yet, maybe this fall.
I’m going to be taking a short break in August when we head out to MN for vacation. I can’t wait :)
BTW, I tried to comment on your 4th of July post, but I got a 404 error post every time I tried. I wanted to say hi and thank you for posting the link to my site.
Ok, enjoy your evening. I’m sure it’s beautiful out.
xoxo, Jackie

Hey Jackie…thanks for the kind words – as always. It is funny how different seasons in families lives can be so hectic or calm at times. It is fun seeing all your pics on instagram. Have fun with your family trip to MN. too bad I didn’t live closer I would have loved to hook up and meet face to face!

and for some reason that july 4th post gave me errors too…I didn’t work on it more to figure out why…lol…and yes we loved your turkey burgers. so good!
