I made this a couple of weeks ago – I prepped it Monday night so Will could just pop it in the oven Tuesday night for dinner since I was supposed to be gone for my Ladies Bible Study…however the meeting got changed to my house so my friends can testify to the delicious smells that were taking over the kitchen. And I can testify to how delicious this meal is!!! …the garlic, the butter the cheese…mmmmmm.
Oh and if you need another source I gave my cousin Katy leftovers for being such a great Teacher…I am sure she won’t mind if I share her email for questions. LOL

CREAMY LAYERED ALFREDO BAKE
Ingredients16 ounces pasta homemade alfredo sauce – recipe below 1/4 cup sour cream 1/4 cup cottage cheese 6 ounces mascarpone cream cheese 2 large farm fresh eggs, lightly beaten 1/4 cup grated Parmesan cheese 1 Tablespoon Italian Seasoning 4 cloves minced garlic 2 cups shredded mozzarella cheese DIRECTIONS Prepare pasta according to package directions and drain. Stir together Alfredo sauce, sour cream, and cottage cheese; toss with pasta until evenly coated. Spoon half of mixture into a lightly greased 9X13 baking dish. Stir together mascarpone, eggs, parmesan,italian seasoning and garlic; spread evenly over pasta mixture in baking dish. Sprinkle half of the mozzarella cheese on top of mascarpone mixture. Spoon remaining pasta mixture evenly over cheese layer; then sprinkle evenly with remaining mozzarella cheese. Bake at 350° for 30 minutes or until bubbly.
Homemade Alfredo Sauce1/2 cup butter – which is 1 stick 2 cloves fresh minced garlic
2 ounces mascarpone cream cheese
2 cups heavy cream
2 teaspoon garlic powder
pinch of salt
1/2 teaspoon italian seasoning
⅔ cup grated parmesan cheese
In a saucepan melt the butter over medium heat. Add fresh minced garlic and cook for 1 minute. Add mascarpone and whisk to smooth and melted. Whisk in the heavy cream. Season with the garlic powder,salt and italian seasoning. Bring to a simmer and whisk frequently until sauce thickens, around 15 minutes. Stir in the parmesan cheese. When melted, remove from heat.
Some tips for this recipe
You can just buy one 8 oz. container of mascarpone cheese and you will use it all in this recipe. While you are buying one toss another in your cart – I love this stuff so I am sure I will have you using it again soon.
If you decide not to make the homemade alfredo…which I can’t guarantee it will be AS wonderfully delicious as this one…but if you must a 16.9oz. jar will do.
Serve with a salad and fresh garlic bread. Enjoy!
