Creamy Feta Vinaigrette Dressing and Vegan Ranch Dressing

Lately Monday’s have turned into salad night. I think I crave something refreshing after a weekend of eating A LOT. Eating out a lot. I don’t seem to cook so much on the weekends. Plus I’ve been trying to get into the habit of going meatless one night a week. Meatless Monday.

I’ve had some feta in my fridge I needed to use up and came across this feta vinaigrette recipe. My hubby loves feta – me not so much hence why I made two dressings.

Let’s start first with the feta. Will rated this dressing a 9!

Creamy Feta Vinaigrette

Ingredients

  • 3oz feta cheese (crumbled)
  • 2 1/2 tablespoons red wine vinegar
  • 1 tablespoon water
  • 1/2 teaspoon dried oregano
  • 1/4 cup plus 1 tablespoon EVOO
  • season with salt & pepper

Directions

Mix all ingredients until smooth. I used my VitaMix and it works great for dressings!

Now onto the Ranch dressing…My pantry is full of Annie’s Ranch Dressing. I went and counted I have 4 large bottles.  Our house loves ranch dressing. We love pizza. We dip our pizza in the ranch. Something else I needed to use up in my fridge is my vegenaise. I did a search for a Vegan Ranch Dressing and based upon the ingredients I had available at home I went with this recipe from food.com

Vegan Ranch Dressing

Ingredients

  • 1 cup vegan mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 3 teaspoons parsley (chopped)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup unsweetened soymilk

Directions

Mix all ingredients together. Chill before serving.

I made a nice salad with some organic baby sweet greens, yellow tomatoes and english cucumbers. A fresh loaf of french bread buttered and warmed.  My boys were being super duper good so I made a Baked Ziti dish. So a simple salad dinner turned into quite the feast. I can’t wait to share the Baked Ziti recipe with you tomorrow.

I am on the search now for some neat salad dressing containers to store these homemade dressings!
