Chopped Mexican Salad with Cumin Vinaigrette

I made this yesterday for dinner…my second Meatless Monday meal. I know I am posting this on a Tuesday but I was so tired last night I had to get my butt to bed. This recipe intrigued when I saw “Cumin Vinaigrette”. I love Cumin, my hubby loves Cumin, the boys even love Cumin – which they have no idea what it is but they have been eating everything I make with it. I add cumin to lots of stuff. Even if it doesn’t call for cumin I may add a pinch just to spice things up a bit :-)

I used my Gardien chicken tenders again for this meal. We LOVE them. I need to buy more. Only one bag left in the freezer – we’ve ate a bag at each meal. The boys eat a lot – I could eat more but I share with them. You’d think with all my sharing it’d show on the scale but it doesn’t…but then the truth is after they go to bed I go for the sweets so that balances things out right???? LOL

Now about the recipe…I made a few changes from the original recipe. No onions and bell peppers – ’cause I don’t like them. But I do like poblano peppers who would have thunk it. Also I could not find pepitas….ok when I went to the store I didn’t even know what pepitas were I just thought I would find them. Grocery store was crazy never saw worker so I went without. Now for you my dear friends pepitas are like toasted pumpkin seeds. There your search is over. I also did not add the cheese – AHHHHK I know no cheese?!?. That is so difficult for me but I wanted to push the meal from vegetarian to vegan. So if you want to add cheese she recommend Cotija.

The Cumin Vinaigrette only takes 6 ingredients – the only thing I had to get at the store was the cumin seeds. I had powdered cumin but not seeds. The rest of the ingredients need to be staples in your pantry. Yes NEED. I have to insert one of my favorite things my VitaMix I love it. LOVE. It mixes up anything and everything. The VitaMix is not a need but defiantly put on your WANT list. To make homemade dressing is super duper easy in the VitaMix. 

Chopped Mexican Salad with Cumin Vinaigrette


Cumin Vinaigrette:

  • 1/2 tablespoon cumin seeds, toasted
  • 3 tablespoons canola oil
  • 1 tablespoon olive oil
  • 2 1/2 tablespoons red wine vinegar
  • 1/2 tablespoon honey
  • sea salt to taste


  • bag Romaine Lettuce
  • handful grape tomaotes (diced)
  • 1/2 Small poblano pepper (diced)
  • 1 avocado (diced)
  • 1/2 cup black beans (I use Eden Foods canned black beans)
  • 1/4 cup frozen corn (thawed)
  • 2 tablespoons fresh cilantro (chopped)
  • 1/4 cup tortilla chips (crushed)


Cumin Vinaigrette:
Place the whole cumin seeds in a dry skillet over medium heat. Cook, stirring often, until fragrant and toasted, about 3 minutes. Place into a small shallow dish and add the canola oil, olive oil, red wine vinegar, honey, sea salt, and freshly cracked pepper, to taste. I placed my ingredients in my VitaMix blend until thoroughly combined and the cumin seeds are crushed, about 3-4 minutes. Set aside for flavors to mingle, until ready to use.

Toss together in a large bowl the lettuce, tomatoes, poblano pepper, avocado, black beans, corn, avocado, cilantro and crushed tortilla strips together in a bowl. Drizzle the cumin vinaigrette on top of the salad, to taste, then toss to coat evenly. Serve and Enjoy.

Yum, I will be making this tonight for dinner. Just got lettuce, onions and tomatoes at the Farmers Market. Picked a pepper from my plants. And have chips to use up. Gotta love the VitaMix! I use mine all the time to make dressings.
