Chicken, Quinoa, and Summer Squash Casserole

I bought a very large summer squash from the farmers market on Saturday. I wanted chicken. So began my search for a recipe involving both chicken and summer squash. I came across this recipe with quinoa. Thinking hmmmm….Friday we went out for fish and I had the deep-fried cod – yum. Saturday I ate off the boys plate of mac and cheese. So something yummy and good for me was what I wanted. Chicken – Quinoa – Summer Squash perfect!

If you notice I made this casserole in my cast iron skillet – which I mentioned to you last week. See I told you I would have you using it again. The original recipe tells you to put in a casserole dish but if I can use one less dish even better. Plus that is one of the huge perks with the cast iron skillet…it can go right into your oven!

Chicken, Quinoa, and Summer Squash Casserole

Ingredients

  • 1 Large full chicken breast (cut into bite size pieces)
  • 1 tablespoon evoo
  • 1 Medium onion (diced)
  • 1 Large summer squash (cut length-wise then in half for a moon shape)
  • 1 cup uncooked quinoa (rinsed)
  • 2 cups vegetable broth
  • 2 tablespoons whole wheat flour
  • 1 cup milk
  • 1/2 cup cheddar cheese (shredded)

Directions

Pre-heat the oven to 350.

Rinse the quinoa several times. In medium pot add quinoa with the 2 cups vegetable broth. Simmer for 20 minutes. Set aside

On medium-high heat heat the evoo in your cast iron skillet. Then add the onions and saute until brown. Add the chicken and cook thoroughly.

Next, add the summer squash and cook until soft. Add the quinoa and salt and pepper to taste. Spread evenly in the skillet.

Put the flour in a saucepan over medium heat. Slowly add the milk, whisk to prevent any lumps. Whisk in the cheese and heat until the sauce starts to thicken.

Pour over the casserole and bake for about 20 minutes until the edges and top are browned. Remove from oven - becareful the cast iron skillet will be very hot!

Since overall this is good for you – I know there is cheese but not that much. On a healthy scale Hubby gave this a 7.0. He was pleasantly surprised that he liked it. He had seconds!
