so i do kind of have to laugh. I gave you the fresh good for you winter clementine salad yesterday…and now it is heavy cream, cheese, crescent roll meal.
it is all about balance right?!?
that is how i do it for my family…salads, vegan, meatfree then it can be a cheesy meat meal. There is about nothing that we do not enjoy…it is all about moderation.

yeah chicken pillows.
these are pillows covered in a creamy cheese sauce with wonderful chicken goodness all wrapped up cozy inside.
total comfort meal.
kind of the meal i could make each week and the family would love all over again and again.
now it does call for a can of cream of chicken soup…i kind of frown on those creamed cans…i used Pacific Organic Cream of Chicken
- 2 Large cooked shredded chicken breasts
- 1 8oz crescent rolls
- 1 8oz cream cheese
- 1/4 cup butter
- 1 egg
- 1 tablespoon water
- 1 sleeve saltine crackers (crushed into small fine crumbs)
- 1 can cream of chicken soup
- 1/4 cup heavy cream
- 2 scoops sour cream
- 1/2 cup white cheddar cheese (shredded)
|Preheat oven to 400 F |
In glass mixing bowl soften the cream cheese and butter in the microwave. Heat for about 1 minute..stirring till it is a smooth consistency. Next add the COOKED shredded chicken.
Use your silpat or parchment paper and cover a cookie sheet. Then lay out the crescents stretching them out a little bit...but not too much you don't want to rip them.
Place a couple spoon fulls of the creamy chicken mixture into the fat center part of the crescent roll. Then take the skinny end and fold it up and the rest of the side up and around it so that none of the chicken filling is showing. There you have your pillow.
Next we are going to lay out the coating for the pillow. You will need a bowl for the egg then a dish for the saltines- I used a glass pie dish. So in the smaller bowl beat the egg with the tablespoon of water. Dip the pillow into the egg wash then onto the crushed saltine crackers. Make sure the pillow is coverd on all sides with the crackers. Once it is covered place back onto the prepared cooie sheet.
Place cookie sheet in oven and cook for 20 minutes.
While the chicken is cooking you will make the cheese sauce.
In a saucepan add the can of cream of chicken and heavy cream. What it is heated through add the sour cream and cheese. Mix until the shreeded cheese is fully melted. Turn the burner on low.
When the chicken pillow are done cooking place on plate. Cover with cheese sauce.

1. to get fine saltine crumbs you can place in the food processor. but if you don’t want hassle you can just crush them up in the sleeve – that works too.
2. if you are a sauce family double the sauce…it is worth it.
3. also you can place your chicken breasts in slow cooker before you leave for work then they will be cooked and ready to make this meal.
