cheesy chicken & broccoli stromboli

this meal came from my meals on a mission…when i was on a conquest to use up the food in my freezer and pantry.

i’ve had a couple frozen bread loaves…and a bag of frozen broccoli so i knew this was going to be a for sure meal to make.

overall this dinner is easy to make. easy to enjoy.

a great simple family dinner.

i used a loaf of Rhodes frozen bread.

i don’t remember why i bought a bag of this bread…actually while i am typing this i think i bought to make this stromboli last year. hahaha

i still have one loaf left so that will probably be another stromboli. lol

cheesy chicken & broccoli stromboli


  • 1 loaf frozen bread dough (ie. Rhodes thawed per directions on bag. you will want to set this out in the morning.)
  • 1 Large cooked chicken breast (cubed)
  • 1 1/2 cup broccoli (i used frozen and thawed it out so you don't get all the liquid)
  • 2 cups shredded cheese (any cheese is fine i used combination of mozzarella & american)


Preheat oven to 425 degrees.

Line a cookie sheet with silpat or parchment paper. Press bread dough into a rectangle. Sprinkle 1/2 cup cheese in the middle of the dough. Top evenly with the chicken and the broccoli. Then sprinkle with the remainder of the cheese.

Fold in short sides of dough aboutn an inch, then fold in long sides over each other, overlapping in the center and pinch to seal. Carefully flip the stromboli over so the seal is on the bottom.

Brush with olive oil. Bake for about 20 minutes, or until crust is a golden brown. Let cool about 5 minutes before slicing.

lol hannah i had to keep looking at my list to make sure i wasn’t missing anything…i usually use a lot more ingredients so it was nice to have such a short list.

I have been on a mission to use up ingredients too. It feels like I’m eating for free since the ingredients are a sunk cost! I have some croissant dough I need to use up in the next two weeks This would work great in it! Plus it would make my boyfriend happy.

Oh my gosh, how yum! I know I would love this. Broccoli and cheese = genius. I’ve never heard of Rhodes bread, so I’ll have to look for it. Seriously, this looks so good I’ll probably be thinking about it all day…
