cheesy carrot casserole

Yeah…cheesy i have you there…now I don’t want to lose you at carrot.

hang with me people…cheesy casserole.

I served this when we had friends over for dinner…along with meatloaf.

it was a huge hit…there is really not much NOT to like about this…cheese butter heavy cream.

I will admit the only bummer is making my farm fresh carrots totally unhealthy – but at least we did get some  Vitamin A :-)


cheesy carrot casserole


  • 4 Large carrots (sliced)
  • 6 slices white bread
  • 8oz sharp cheddar cheese (shredded)
  • 3 tablespoons butter

white sauce

  • 1/4 cup butter (1/2 a stick)
  • 1/4 cup flour
  • 2 cups heavy cream
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 1/4 teaspoon dry mustard


White Sauce
Preheat oven to 350 degrees

Melt butter in sauce pan. Add flour and stir to combine.
Once you have your roux, slowly add half and half and stir constantly until sauce thickens. Remove from heat add salt, onion powder and dry mustard.
Add carrrots to a 9x13 baking dish, then top with white sauce. Sprinkle cheese evenly over top.
Place slices of white bread in food processor and blend until they are fine bread crumbs. Then in a skillet, heat the 3 Tbsp. butter and sauté bread crumbs in the butter until golden brown in color and getting a little crispy. Sprinkle bread crumbs over carrot mixture.
Cover casserole with foil and Bake at 350 degrees for 20 minutes. Then remove foil and bake for an additional 15 minutes.

This sounds good! I might need to swap out the heavy cream for fat free half and half though, I have to keep my veggies at least a little low cal or my pants wont fit anymore 😉

Oh, this sounds good! I’ve never tried making a cheesy carrot casserole, but I love both carrots and cheese!
