Artichoke Bruschetta

I made this appetizer for my youngest sister Mary Fern’s 18th Birthday cookout pool party…in case you were wondering I am only a few years older. BAhahahaha  Happy Birthday Mary!

When I did a search of this recipe this one was my favorite since there was no mayo. Just a nice fresh bruschetta to enjoy on a hot summer day.

I can’t wait till I learn to take & post even better photos – I hope this comes through…like you can just see the freshness!

recipe from For the Love of Cooking

12 oz jar of marinated artichoke hearts, diced
Handful of grape tomatoes, diced
1 Tablespoon shredded Parmesan cheese
4 FRESH basil leaves – chopped
Sea salt to taste
French baguette, sliced thinly
1 clove of garlic

Preheat the oven to 350 degrees.

Combine the artichoke hearts, grape tomatoes, Parmesan cheese, basil and sea salt.

Get your hands in the bowl and mix the ingredients until well combined :-)

Place the baguette slices on a baking sheet and place into the oven. Bake for 3-4 minutes until slightly crisp.

Remove the bread from the oven and rub the garlic clove over each slice. Yep just take the garlic clove and rub all over each slice of bread.

Top with the artichoke heart mixture – grab a slice and EnJOY!

NOTE:  I would recommend to double this recipe. I had about 8 slices of bread left and some of the pieces could have been loaded up even more!
